At La Jefa Empanadas, we believe that great food starts from the heart. Founded by Angela Woodley, our empanada company is a celebration of Puerto Rican and Dominican heritage, infused with a deep passion for plant-based living. Every empanada is crafted with love using fresh, wholesome ingredients that bring comfort, culture, and joy in every bite.

Our Story

Angela Woodley’s culinary journey began in the South Bronx, where she learned to cook by watching and helping her parents. Her mother’s love for growing herbs and using them to elevate traditional dishes sparked Angela’s early appreciation for real ingredients and bold, soulful flavor.

In 2010, Angela moved to Georgia and worked in the music industry. As a side hustle, she began making empanadas for her studio clients, a passion that quickly grew into something more. In 2015, Angela became a mother, and in 2016, her son was diagnosed with Autism and ADHD. That diagnosis profoundly shifted her mindset and lifestyle.

Through research, Angela discovered the powerful link between gut health and brain function, especially in children with special needs. She committed to a fully plant-based lifestyle, both to support her own health and to lead by example for her son.

From 2016 to 2020, while living plant-based, Angela continued running La Jefa Empanadas as a catering business still offering traditional meat filled empanadas her customers loved. But over time, it became harder to serve food that no longer aligned with her values. With rising financial pressures and a need for alignment, she made the tough decision to pause the business in 2020.

After a three year break to regroup, heal, and refine her vision, Angela relaunched La Jefa Empanadas in early 2024 as a 100% plant-based food truck. Her mission is now crystal clear: to serve authentic Puerto Rican and Dominican flavors made with fresh, plant-powered ingredients proving that food can honor culture, bring comfort, and support health all at once.
